What makes an ice cream and sorbet different is also rooted on whether or not dairy is used. In fact, cream and/or milk ice cream is always included as its vital ingredients, where as sorbet originally never consists of dairy or eggs, instead it is made from fruit juice or fruit purée firstly. Before the twentieth century, ice-cream was used in fruit sorbets and even Charles 1 of England rewarded his ice-creammaker the lifelong pension for maintaining the formula hidden. Throwing back to 3000BC, according tothe beliefs, the roots of sorbet were discovered by Asian cultures in the form of crushed ice and flavoring.
